Classification and Awarding Coffee:

Specialty coffee is a high-quality product scoring over 80 points on a scale of 1 to 100. Only Coffea Arabica receives such an award. This species and grade of coffee stand out with a remarkable aroma intensity and complex flavors, unlike lower-graded types.

Body: ●●●○○

“Density / Oiliness” appears when examining a fresh, hot coffee sip. It involves checking the coffee’s consistency by taking a small sip, leaving it on the tongue, and optionally rubbing the tongue against the palate.

Acidity: ●●○○○

Acidity forms a crucial component of full coffee flavor. It doesn’t imply sourness or astringency but manifests as zesty, citrusy notes in the aroma, adding character and a sharp edge to the brew.

Intensity: ●●●●○

Intensity refers to the depth and richness delivered by the first impression of a brew. It combines all flavors into a definition of how invigorating the drink feels. Lower intensity indicates a milder coffee focused on aftertastes. Some equate high intensity with weight or boldness, especially evident in mid-high roasts.

Roast: ●●●●○

Roasting determines the coffee bean’s true character. One type can taste entirely different depending on the roast and the collective bouquet of aftertaste. Common roasting levels include very low, light, medium, mid-high, and high (or dark). Delicate types like very low and light roasts suit alternative extraction methods, such as drippers, Chemex, or French press, though some prefer pressure machines. Medium roasts offer complexity when used in a Moka Pot, requiring no complicated machinery. Dark roast, known as espresso type, excels in pressurized machines like Italian coffee makers, delivering dense espresso with a lasting hazel-colored crema.

General Information

Flavor and Notes:

To identify flavor precisely with all its undertones, the Specialty Coffee Association of America created an intriguing ‘notes circle chart.’ It’s helpful for discovering tastes and aftertastes without needing expertise, commonly used in coffee cupping.

Notes Circle Chart – What Is It and How It Works?

Thousands of chemical ingredients contribute to a coffee brew’s flavor. The note circle chart designed by the Specialty Coffee Association of America recognizes the most distinct flavors, placing the easiest to identify closer to the center and more delicate ones towards the rear. By following the notes from the center to the rim, anyone can recognize the unique coffee profile, even without being a connoisseur. This classification method allows everyday coffee drinkers to explore their favorite drink further, turning the usual experience into something more meaningful and interesting.

Our Method of Packaging the Coffee:

We pack our coffee in innovative and environmentally friendly “Aroma Save” bags, designed to preserve the original coffee aroma while preventing new smells from plastic and external environments. The ECO/Kraft design includes a ventilation system that lets air escape without entering the bag. This feature enables smelling the coffee without opening the bag. Our zip-lock mechanism ensures a 100% seal, allowing countless re-openings without extra tools. The paper used in our bags is recycled and minimal in prints to reduce environmental impact. Our company prioritizes product content over packaging, ensuring the highest quality container with hermetically closed contents free from exposure and unwanted aromas.

Coffee Making Tips:

For optimal results, grind coffee just before use, matching the grind grade with the device type. Typically, 1.5 to 2 teaspoons (around 7 grams) suffice per cup. Use water around 95°C.

Types of Coffee Grinding and Its Meaning:

Coffee grinding varies using manual or electrical grinders or even mortar and pestle. Important is achieving the right fineness. A common belief is that the longer grounds interact with the brew, the coarser they should be, though this is vague. What matters is the brewing style and device. Pour-over methods require appropriate grind size to prevent clogging. Pressure-based machines suit fine grinds, while coarser grounds work well with filters, percolators, or thermal coffee makers. For the coarsest grind, a French Press is ideal. Exceptions like Turkish Coffee Pots use very fine powder, cooking it directly with water, then heating and cooling repeatedly for an exotic preparation style.

Coffee Grinding Devices:

Understanding grind types is crucial for perfect coffee. Popular electric blade grinders are fast but may overheat beans, releasing essential oils too quickly, resulting in less aroma. Superior are mill grinders with two abrasive surfaces or ‘teeth,’ ideally made of non-corrosive metal. Mill grinders vary, often offering adjustable grinds with no pre-set programs for maximum control. A broader spectrum allows producing diverse coffee types.
